A quiche is a savory pie, filled with veggies and/or meat (usually bacon or ham), and held together by an eggy, cheesy yumminess.
Tiffany and I adapted a Quiche Lorraine recipe from a favored french cookbook we've had in my family for years, and often use for holiday occasions. The original is a basic quiche, with fried onions and bacon. Bacon is out of the question, so Tiffany and I decided to load up with veggies. Groulliere (sp?) is rich-people cheese, we went with Monterrey Jack, although I'd probably recommend a cheese with a little stronger flavor, like Swiss...our groulliere.
First prepare the pate brisee, or just some pie crust.
Pate Brisee Ingredients:
5 tbsp. butter
Pinch salt
1 egg
(1.5?) C. flour
(1/4 C.?) water
Filling Ingredients:
2 eggs
1/2 cup white cheese, grated
5/8ths cup whole milk (or light cream)
S & P
2 tbsp. oil
1 bag ready-to-use baby spinach
2-3 stalks asparagus, finely chopped
2 stalks celery, finely chopped
2 small carrots, finely chopped
1 onion, finely chopped
1-2 cloves garlic, minced
Several button mushrooms, roughly chopped
1/4 C. Peas
1/4 C. chopped broccoli
Preheat oven to 350 degrees F.
While the pate brisee chills in the fridge, in a frying pan or wok, heat oil then add onions and asparagus. Sautee for a minute or two then add celery, carrots, garlic, and broccoli. Cook for several more minutes until onions & celery are becoming translucent, then add frozen peas & spinach, when spinach is just wilting, add chopped mushrooms. Remove from heat.
Line pie tin with pate brisee & vent with fork tines. In a medium bowl, beat two eggs, add whole milk, generous S&P (but don't overdo it obviously), and cheese. Spread mixed vegetables into crust. Pour egg mixture over top. Top with more cheese if desired.
Cook for 20-25 minutes, until firmly set and beginning to brown on top. Let cool 5-10 minutes before serving.
You have made a "suicid," according to T9word.
To make "quickies," cut out circles of pate brisee or pie crust and line a muffin tin with the dough. Spoon veggies into each cup, pour egg mixture on top, topping each with extra cheese & pepper, and cook in 350 degree oven for 15-20 minutes, or until firmly set and beginning to brown.
